Rachel was born to Paul and Emma (Wolff) Meidinger in Bismarck, ND, on April 10, 1945.  She received elementary education at a rural school in Blumenthal District near Venturia, ND and graduated from Wishek High School in 1963.  She married Ellon Meidinger on October 11, 1963, at St. Andrew's Lutheran Church near Zeeland, ND. Rachel and Ellon welcomed their only child to their family and to the world, daughter Laure Ann, on April 20, 1965.

Rachel was a devoted mother, wife, and homemaker.  Living and working with Ellon and Laure on the farmstead of Ellon's family thirteen miles north of Zeeland.  Outside of the home, she managed a chuckwagon, where she catered for outdoor social events in the community.  This led to her two-decade career at Zeeland Public School as the food service manager, where her dedicated service, constant smile, and positive demeanor made her beloved among the faculty, staff, and students of the institution.  She retired at the end of 2013.

Rachel was an active long-term member of the Country Homemakers, was leader of the Wild Rose 4-H Club, and superintendent of Sunday School at the New Kassel Reformed Church.  Besides her notoriety as a skilled cook, she was known as an expert tailor and seamstress, sewing anything and everything, from bridesmaid dresses to ring-bearer suits. She even blessed the marriage of her daughter by sewing her a wedding gown.

Rachel is survived by her husband Ellon; her daughter Laure and son-in-law Donald of Bismarck, ND; her grandson Eric, his wife Rita, and great-grandson Easton of Peyton, Colorado; and her grandson Curtis of Astoria, New York.

Rachel was preceded in death by her parents; her three sisters, Baby, Leona, and Ramona; five brothers, Milbert, Marvin, Walter, Melvin, and Dale.
