Janice, a devoted wife, loving mom of 5, grandma, & great grandma, was born April 27, 1940 in Eureka, SD. She was thee only child of John and Esther (Straub) Eszlinger. She grew up on a farm east of Danzig, ND, where she attended farm school. She later attended and graduated from Ashley High School.
Janice met the love of her life at a street dance in Zeeland. In 1959, she married Victor Meidinger of Zeeland, ND. They were married 63 years. Victor & Janice farmed 18 miles southwest of Wishek, ND. She was a devoted wife and helped her husband on the farm with milking cows, making hay, gardening, canning, and butchering to name a few.
Janice was well known for her love of cooking and baking. Her favorite place to be was in the kitchen baking and cooking for her family...especially caramel rolls, fresh homemade buns and countless German dishes. Entertaining a house full of family or friends was one of her greatest joys...she made sure nobody ever left the house hungry. She also cooked and baked at the Prairie Winds Cafe and the Wishek Nursing Home. Janice was a Tri-County Fair Director's wife for 40+ years. For those years, she managed and cooked at the concession stand. She often said, "If I was a little younger, I would open a restaurant".
She was a member of the Country Homemakers Club for many years, taught Sunday School, was a member of the church choir, and played piano for special groups in church. She had a gift of playing piano and often added her own flare to the music. She also served as a Goodwill Ambassador at the Wishek Living Center. Janice was currently a member of Faith Community Church.
